Most often used in Moroccan, Algerian and Tunisian cooking, this marinade is made from a blend of cumin, coriander, chilli, garlic and paprika, and is excellent with seafood or tossed through couscous, lentils and salads. Spread it on grilled fish, use it to marinate roast lamb or chicken, or serve with a fried eggplant salad.
