Verjus is made from the fresh juice of unripened semillon wine grapes. With a sweet upfront palate, this verjus has a strong acidic taste at the finish. Verjus is a culinary ingredient indigenous to the world's wine-producing regions and is used in sauce-making, or poaching fish and meat, and to dress salads, vegetables and fruit. Use to deglaze the pan after cooking fish or white meat. In summer, add a splash of verjus to a glass of soda water to make a refreshing drink.
